 ackle one of the pillars of French pastry.  We will explore the dual na
 ture of choux\, mastering both sweet piped classics and savoury baked go
 ods.\n\nSkills taught in this class:\n\nSavoury Gougères:\n\n 	The fund
 amentals of pâte à choux (cooking out the flour panada)\n 	Beating in 
 eggs to achieve the perfect “V” stage dropping consistency.\n 	Incor
 porating heavy cheese without weighing down the rise.\n 	Baking with ste
 am for maximum expansion and hollow centres.\n\nElegant Éclairs:\n\n 	P
 recision piping using star and round nozzles for uniform lengths.\n 	Mak
 ing a velvety pastry cream (Crème Pâtissière).\n 	Filling techniques 
 using a bismarck tip.\n 	Achieving a glossy\, smooth fondant dip or gana
 che glaze.\n\nThe Showstopping Paris-Brest:\n\n 	Piping large\, overlapp
 ing concentric rings of choux.\n 	Creating a rich\, nutty praline paste.
 \n 	Making a mousseline cream (pastry cream whipped with softened butter
 ).\n 	Advanced decorative piping and slicing choux horizontally without 
 tearing.\n\nThis is a busy class so be ready for a night full of patisse
 rie delights\, flavours and fun!\n\nPlease bring tupperware to take home
  your goodies.\n\nThis class costs £47.50 per person.\n\nOver 16’s on
