MASTER OF MARSHMALLOWS & SOFT BATTERS

Menu:  The Ultimate Chocolate Tea Cake; Gourmet Marshmallow Treats; Chocolate Whoopie Pies

In our September patisserie class we will be focusing on the art of confectionary, gelatine stabilisation, and soft-scoop batters.  You will learn the precision required for perfect marshmallow textures, from moulded domes to pipeable fluff.

Skills taught in this class:

Chocolate Tea Cake:

  • Creating a fluffy, stable marshmallow centre.
  • Layering, sealing, and demoulding the finished tea cakes.

Gourmet Marshmallow Treats:

  • Boiling sugar syrups to the precise soft-ball stage.
  • Working with gelatine or setting agents.
  • Infusing delicate flavours (purees and floral extracts) without splitting the mixture.
  • Curing, cutting and dusting marshmallows.

Chocolate Whoopie Pies:

  • Making a sticky, spreadable marshmallow fluff.
  • Creaming and mixing a soft cake-like cookie batter.
  • Portioning and baking for a perfectly soft, uniform crumb.
  • Sandwiching and presentation techniques.

This is a busy class so be ready for a night full of patisserie delights, flavours and fun!

Please bring tupperware to take home your goodies.

This class costs £47.50 per person.

Over 16’s only.

Price Includes Tuition, Aprons, Ingredients & Hot Drinks plus Sparkling Elderflower will be served with your meal.  You are more than welcome to bring your own alcoholic or non-alcoholic drinks to enjoy whilst cooking and with your meal.
